First it's important to make sure the bbq places you eat are practice proper food handling. Your health depends on it! Proper food handling consists of, cleanliness, hand washing, cooking temperatures, proper refrigeration for storage, and storage. If your bbq place is storing their food in the open and not protected from insects crawling or flying you are at risk. Flies are the biggest carriers or bacteria. Lack of storage refrigeration or not cold enough refrigeration is equally as dangerous. Bacteria breeds very quickly in poultry and pork when refrigeration is above 39 degrees F. Which could result in food poisioning. Cross contamination of uncooked and cooked foods from improper handling. Lack of hand washing by the cook. I personally don't like the use of cooks using hand towels to wipe their hands. I believe it discourages them from washing their hands which is more sanitary for food safety. So next time you go to eat at your favorite bbq place, keep all of this in mind. It could keep you from having to make a trip to the hospital or doctor due to food poisioning.
